Tasting from Fermentation Tanks

Tasting must from tanks during the early stages of fermentation

Day 6: September 7, 2023

Winery: Cantina Diomede (Oria Wines)
Varietal: Primitivo DOC

This is an early morning outing with Teo at the Oria Wines winery where we tasted must from various fermentation tanks.  The grapes in all three tanks we tasted from, have been fermenting for 1 to 3 days.  As you would expect, at this stage of fermentation, there is little to no alcohol content in the must.  However, you can get an idea as to how concentrated the juice is, and the potential it has to turn into a well structured wine.

Of particular interest is the third tank – grapes fermenting in this tank are from Teo’s father’s vineyard.
